-Add spirits and ice, then shake hard until ice cold.<br />
-Fill a balloon glass with fresh ice and strain the cocktail mixture over the top, adding a dash of red orange juice if required.<br />

<li>Slowly      pour the champagne onto the stem of the spoon allowing it to gently slide      down on the mixture.</li>
<li>As you      are pouring , move the bar spoon and champagne upwards keeping the flat      base of the spoon on the top of the champagne until you reach desired      amount of champagne.</li>

<p>60mls Jameson or other whiskey<br />
1 sugar cube<br />
3 drops of Angostura Bitters<br />
2 star anise ‘stars’<br />
Orange Peel</p>
<p>-In a      rocks glass, coat one sugar cube in bitters and dissolve in a dash of soda      water.<br />
-Add a      few large ice cubes to rocks glass and pour in the Jameson.<br />
-Add      the star anise and the orange peel, then stir and serve.</p>
